Supercharge with Hulk Pancakes!

One of the questions I get asked the most, is “What are in those green pancakes you make”? … Probably because it’s one of the ways I can get my picky eaters in the house to eat fruits and vegetables.

I was initially going to add breakfast in the title, and then I realized I’ve made these for lunch, snack, and dinner! So, this is me officially giving you permission to have these pancakes any meal of the day – especially when they are this delicious and packed with nutrients – and name after one of my favourite super heroes “The Incredible Hulk!”

Ingredients:

– 1 handful of spinach or kale

– 1 handful of mini broccoli florets

– 2 ripe bananas (you can include the peels minus the tip and round bottom part)

– 3 cups oats (Rolled or Instant)

– 2 1/2 cups non-dairy milk (I love using Earth’s Own Cashew or Oat Milk)

– 1 tsp vanilla extract

–  6 dates

– 1 tsp milled flaxseed

– 2 tbsp oil of your choice (I like using Avocado Oil)

 Directions:

  1. Heat oil on pan on medium setting.
  2. Combine all ingredients except oil in a blender or food processor and blend until smooth.
  3. Let batter sit for 5 minutes
  4. Pour batter from mixer or with a spoon to the heated pan.
  5. Cook until holes start to form on the top side and flip *both sides should be brownish green*
  6. Top with any nut or no-nut butter, 100% maple syrup or chocolate hummus with a side of your favourite fresh fruit and ENJOY!

    NOTE:
These ingredients will make a BIG BATCH! Cut the amounts required for each ingredient in half or store the extra batter in a washed-out ketchup squeeze bottle and make a few at a time.

STORAGE: Extra pancakes can be stored in an air-tight container in the fridge for 3-5 days.

Got a new “Mickey Mouse” themed waffle-maker you’re dying to use?

Simply add 2 tablespoons of oil to the pancake recipe in order to use it as a waffle recipe.” — Thanks for the tip Rachel & Polly from the “Thriving Home” Blog
