Read MoreOne of the questions I get asked the most, is “What are in those green pancakes you make”? … Probably because it’s one of the ways I can get my picky eaters in the house to eat fruits and vegetables.
I was initially going to add breakfast in the title, and then I realized I’ve made these for lunch, snack, and dinner! So, this is me officially giving you permission to have these pancakes any meal of the day – especially when they are this delicious and packed with nutrients – and name after one of my favourite super heroes “The Incredible Hulk!”
Ingredients:
– 1 handful of spinach or kale
– 1 handful of mini broccoli florets
– 2 ripe bananas (you can include the peels minus the tip and round bottom part)
– 3 cups oats (Rolled or Instant)
– 2 1/2 cups non-dairy milk (I love using Earth’s Own Cashew or Oat Milk)
– 1 tsp vanilla extract
– 6 dates
– 1 tsp milled flaxseed
– 2 tbsp oil of your choice (I like using Avocado Oil)
